Texas Caviar

2 cans black-eyed peas, rinsed and drained
1 small onion, finely chopped
1 red pepper, finely chopped
1 green pepper, finely chopped
1Tbsp garlic, minced
1/2 cup Italian dressing

Combine all ingredients in a large bowl. Stir to coat everything with the dressing. Refrigerate for 1 hour or until ready to serve.
